When I’m craving fried chicken, nothing stands in my way, not even a drive to Lafayette. That’s where the Post Brewing Co. opened in January with its amazing GoodBird chicken. Crispy skinned and with just the right blend of seasonings, this is fried chicken as it’s meant to be.
The secret to the dish just might be patience. Chef Brett Smith (who traveled the country in search of the ultimate fried bird) rubs all-natural chicken with herbs, cayenne, and seasonings, dusts it with Lillabee gluten-free flour, and allows the meat to rest overnight. The next day, Smith spritzes the chicken with buttermilk, recoats it, and allows it to rest (again). When it’s finally ready to be fried, the result is juicy, crispy, golden brown glory. Just as good are the accompanying garlicky dill pickles and the country gravy laced with house-made chorizo.

Save room: Never pass up the Post’s baked delights, which include whoopie pies, flaky berry pies, and caramel pecan rolls served warm in little cast iron skillets.
