The storefront at 946 Pearl Street has been plagued by a revolving door of restaurants over the years, (Wok Eat, World Café, The Blending Cellar, Cuvee, to name just a few) but with the grand opening of the Wonder Press juice bar on June 21, the space feels like it has finally found its perfect fit. Created by Brooke Jordan, Robyn Knowlan, and Cecily Runge (three Boulder natives and childhood friends), the juice bar appeals to the Boulder creed of sustainability and clean living through a line of 100 percent organic cold-pressed juices, coffees, fresh nut milks, customized cleanses, and a few baked goods.
Jordan, Knowlan, and Runge (aka the Juice Girls) came back to Boulder after stints in Los Angeles, San Francisco, and New York City, respectively, where they each learned the benefits of cold-pressed juice. Using organic veggies, fruits, seeds, nuts, and herbs from local sources whenever possible, the Wonder Press process maximizes the availability of the nutrients in liquid form and creates nutrient-dense products that deliver enzymes, vitamins, and minerals while tasting clean and fresh. Innovative combinations include the soothing Yam Cookie with yam, ginger, carrot, cinnamon, clove, and cardamom; as well as a lighter version called Emerald that presses cucumber, celery, kale, pineapple, mint, lemon, and parsley; and the Yum Yum Latte with house nut milk, cold brewed Boxcar coffee, maple syrup, and vanilla bean.
The trio’s commitment to sustainability and connection to the community is evident throughout the business, from a bottle exchange program to a no-waste philosophy where residual pulp from the juices is either donated to the Mountain Flower Goat Dairy to be used for feed, or used as a fiber source in their house-made muffins. A top-to-bottom remodel of the space reflects the refreshing change by ushering in natural light and adding free-wifi as well as long booths and comfy pillows to create a cozy, welcoming space that is designed to foster community.
