Wholesome Breakfast
Granola
28 ounces steel-cut Irish oatmeal
1 stick butter, melted
¹/2 cup brown sugar
1 ¹/2 teaspoons cinnamon
¹/2 cup pecans
Mix oats with melted butter, brown sugar, and cinnamon. Toast in oven until golden brown, about 10 minutes at 350°. Watch carefully so it doesn’t burn. Mix in pecans.
Fruit Compote
1 cup golden raisins
1 cup dried figs
1 cup dried peaches
1 cup dried apricots
¹/2 cup honey
1 ¹/2 quarts water
Cut fruit into small pieces, mix together in a saucepan, and simmer on low for 30
to 45 minutes.
Top granola with Greek yogurt and compote.
