TONIGHT: CLASSIC PERUVIAN DINNER
Peru is a hot topic in the culinary world, and Limón,
chef-owner Alex Gurevich‘s Uptown restaurant, is just the spot to get acquainted
with the cuisine and culture. While Gurevich usually dishes up “novoandino” fare, a modern take
on Peruvian food, tonight he’s cooking a classic four-course meal, complete with pisco
sours (the national cocktail), and two wine pairings. For $50 you’ll dine on ceviche, potatoes
dressed with aji pepper sauce, lomo saltado (stir-fried beef with tomatoes, soy sauce, and
scallions), and duck with cilantro rice, while 5280 contributing
writer Kazia Jankowski presents a slideshow. Jankowski recently returned from
several months in Peru where she authored the Moon Peru guidebook and
launched Pica Peru, a culinary travel business. A portion of the dinner’s
profits go to Better Peru, a nonprofit designed to help needy families in the
southern part of the country.

IN SEASON: FIGS
Each year I look forward to the all-too-short fig season. And with baskets of
fresh black missons showing up in the produce aisle, now’s the time to enjoy
the fleeting fruit. There are several ways to eat figs, but grilling the fruit allows for the
insides to caramelize and deepen in flavor.
Snip off the small stem, cut in half and toss with
olive oil, a dash of kosher salt, and a drizzle of aged balsamic. Grill two to three minutes per
side until grill marks appear. Serve over microgreens and fresh Haystack Mountain goat cheese.
Drizzle with more olive oil and balsamic (or your favorite balsamic dressing), and serve.
Or, for a taste variation, pair the grilled figs with Haystack’s queso de
mano, a hard, raw-milk cheese that was recently given a nod in the November issue
of Food & Wine magazine.

Last week, the Colorado Wine Industry Development Board recognized three
restaurants (one in Denver and two in the Roaring Fork Valley) for supporting the local wine
industry. The winners this year:
