At Dancing Noodle Thai Cuisine, a family-run restaurant in Parker, chef-owner Wichian Ruangwut focuses on freshness and authenticity. His curries, noodles, dumplings, and soups resonate with a richness and balance that speak of Siam. Ruangwut’s gaeng keow wahn, or green curry (pictured), is a shining example with tender green beans, hearty chunks of eggplant, bamboo shoots, zucchini, and strips of red pepper bathed in a rich, velvety base of curry, lemongrass, coconut, and fresh Thai basil. Add your choice of chicken, beef, seafood, or tofu and discover the soulful dish. Khanom jeep (steamed dumplings), tom yam goong (hot and sour soup), tender chicken satay, and a spot-on pad thai are also not to be missed.
