Peak Spirits is based at 70-acre Jack Rabbit Hill, a sprawling farm that holds a vineyard, 11 acres of hops, cows, sheeps, chickens—and a still shed, where CapRock gin, vodka, and brandies are produced. You can find these spirits at local liquor stores, or you can stop by the distillery’s CapRock Farm Bar, which is located inside the Source in Denver. This cocktail features a whiskey made in collaboration with Wynkoop Brewing Company.
You’ll need:
2 ounces Luna White Dog “Beer Craft” Whiskey
1/4 ounce green tea syrup
Two dashes of Dram Apothecary Wild Mountain Sage Bitters
Anise Tincture
Sage leaf
Directions:
Stir together the whiskey, green tea syrup, and bitters. Strain over a large ice cube. Spray Anise Tincture (or add a couple drops, if you don’t have a sprayer), and garnish with a fresh sage leaf.
