Loveland-based Overland Distillery combines historical formulas with modern and sustainable techniques to create its smooth but potent absinthe. Find the stuff throughout Colorado—and in four other states—to make this powerful drink.

You’ll need:

2 ounces Trinity Absinthe

8-10 fresh mint leaves

1 ounce simple syrup

Half a lemon

Crushed ice

Directions:

Muddle the mint leaves with the simple syrup, and “smash” in four lemon slices until they are nicely juiced. Pour in the absinthe, add ice, and shake. Finally, double strain over crushed ice, and garnish with a sprig of fresh mint.
