2 ounces Trinity Absinthe
8-10 fresh mint leaves
1 ounce simple syrup
Half a lemon
Crushed ice
Directions:
Muddle the mint leaves with the simple syrup, and “smash” in four lemon slices until they are nicely juiced. Pour in the absinthe, add ice, and shake. Finally, double strain over crushed ice, and garnish with a sprig of fresh mint.
