The tasting room at the just over one-year-old Marble Distilling Company in Carbondale is the sort of place that makes you want to settle in for the entire night—and luckily, at this distillery-turned-inn, you can do just that.
Co-founder Michelle Marlow said the Distillery Inn was designed so that guests could truly relax and enjoy the spirits. The inn, which is dog friendly, boasts five upscale rooms with modern amenities, and is the only known inn to be housed in a working distillery.
The beauty of the setup is that it allows you to make a night of sampling Marble’s excellent spirits and cocktails without having to worry about the drive home. With that in mind, don’t miss the signature vodka, which is filtered through crushed Yule marble from the famous quarry just 26 miles up the Crystal Valley. The final product has a soft, creamy nose with a smooth, luxurious finish. Next, sip on a gingercello (a lemon and ginger liqueur) and vodka-based Marble-Rita cocktail and nosh on cheeses from Avalanche Cheese Company. Finish with a nightcap of the Dude—Moonlight Expresso coffee sipping liqueur on ice with a splash of heavy cream—and you’ll be ready to head upstairs to your suite, which is outfitted with a fireplace, a king-size bed, a furnished balcony, and organic Colorado bath products.
Plus, staying overnight will give you a chance to enjoy more of what Carbondale has to offer. “There’s so much to do in Carbondale,” Marlow says. “We’ve got great restaurants, skiing, biking, hiking, golfing. It’s such a great, cool town.” Room rates are seasonal, and start at $225 per night.
