Well before the current taco trend took hold, I was already smitten with WaterCourse Foods’ sweet potato-and-black bean tacos. Now, even with places such as Pinche Tacos, T/aco, and Margs Taco Bistro, where you can find all manner of creative combinations (caprese in a tortilla, anyone?), there’s still something about the simplicity of Watercourse’s version that keeps me going back.
Order the dish (available after 11 a.m.) and find a trio of white corn tortillas filled to bursting with black beans, cubed sweet potato, and thin strips of red pepper and sweet onion. Lime-cilantro slaw adds zingy crunch and you can add pico de gallo and guacamole at will. Because I like a little heat, I typically finish off the tacos with a drizzle of Sriracha.
Tip: The meal is light enough that you can—and should—end with a slice of WaterCourse Bakery‘s thick and custardy coconut cream pie.
