After years of enduring long waits at the popular Southern Sun Pub & Brewery—the only brewpub in South Boulder—SoBo residents are anxiously awaiting the soon-to-open Under the Sun Eatery and Taphouse. Located downstairs from Southern Sun, the newest venture by You Eat More Enterprises, LLC (which is also the parent company of Mountain Sun Pub & Brewery and Vine Street Pub) is slated to open early February.
Paul Nashak, the restaurant’s co-owner and manager, describes the upscale taphouse as “classically handsome” and as “a comforting place where people [will] come to connect and to tune into each other rather than tune out the world.” To that end, Under the Sun’s dining room skews more formal than the previous locations’, but the look is softened with a cozy living room-style nook, long community tables, and an intimate bar (read: no TVs).
Top Chef Season 5 contestant Melissa Harrison is consulting on the new entrée-driven menu which focuses on comfort foods such as roasted chicken, lamb short ribs, grilled pork chops, and vegetable pot pie. In addition, executive chef Annabelle Forrestal will use her wood oven to bake breads, smoke meats, and char veggies for both small and large plates.
Tip: Expect the “Suns’” huge selection of beverages with 31 beers, seven wines, and even a few cocktails on tap.
