“A cocktail lover’s dream,” is what Frasca Food and Wine alum Bryan Dayton envisions for his new venture, Oak at 14th. This New American eatery and cocktail bar is scheduled to open on the Pearl Street Mall in late October. Dayton, master mixologist and president of the Colorado Bartenders Guild, has paired up with general manager Annie Polk and executive chef Steve Redzikowski (who comes with heavy-hitting creds of his own, including Frasca, Jean Georges, Le Cirque, Cyrus, and the Little Nell) to bring “something completely different” to Boulder diners.
The plan is to create a professional yet casual experience that focuses on Oak’s high-end beverage program. The liquid assets will complement Redzikowski’s farm-to-table cuisine (think wood-fired meats, house-cured charcuterie, and homemade breads, pastas, and cheeses) with three different drink menus for lunch, dinner, and late night.
As Dayton explains, “Whether it’s pairing a small plate with one of our specialty cocktails made with seasonal fruits and vegetables (such as the Smoky Beet Cocktail), choosing a premium coffee, tea, wine, beer, or unique mocktail to accompany the meal, or adding a Campari sorbet for dessert, dinner becomes a new kind of social experience meant to satisfy every kind of palate.”
Bonus: Keep an eye out for Redzikowski’s suckling pig porchetta, (a juicy cut of rolled pork that’s slow-roasted over the fire until the skin is crispy), to be offered weekly at the Oak.
