After months of delay, Cured cheese shop has finally opened in Boulder—and it’s already found a following.
Cured comes from retired professional cyclist Will Frischkorn and his fiancée, Coral Ferguson, who were inspired by their European travels. Hoping to capture some of the magic behind the markets they visited every day, the duo’s store pays tribute to artisanal food producers. Customers fill wicker baskets with picnic staples including seasonal produce, fresh bread, and affordable wine, along with hard-to-find salts, olive oils, chocolate, and made-to-order sandwiches.
The pièce de résistance at Cured is the gourmet selection of cured meats sliced on Frasca Food and Wine’s old salumi slicer (which was replaced by these), and a rotating, seasonal list of 80 cheeses. Selections come from all over the world, including Denver’s Il Mondo Vecchio and Basalt’s Avalanche Cheese Company.
