If the choose-your-own model works wonders for burritos and bowls at the super successful Chipotle chain, why not do the same for sushi? That’s apparently what owner J.W. Lee thought when he recently opened the new Wasabi Roll & Go, a fast-casual concept that allows you to create your own sushi combinations. You choose, they roll, and you’re seated or out the door in minutes with tailored combinations.
A sister to Lee’s Wasabi Sushi Bars located in Centennial and Lakewood (as well as six Midwestern locations), Wasabi Roll & Go uses the same fresh fish, which is over-nighted from sources around the world. Patrons select from a wide array of proteins from fresh yellowtail to fried tofu; then their choice of brown, steamed, or sushi rice; add up to five varieties of vegetables like steamed asparagus, pickled radish, and avocado; and crown it with options such as tempura crunch, house-made wasabi mayo, or briny masago. Roll & Go will either wrap your masterpiece sushi-style or layer it in a bowl with a choice of rice or noodles.
Can’t decide? Pick up a pre-made bento box (pictured) or one of Roll & Go’s signature rolls with DU-inspired names like the Pioneer or Honor Roll.
