Even with Denver’s glut of burger shops, I rarely get a hankering for the all-American sandwich. I’m usually deterred by the monstrous fat content and concern over the beef’s source. Instead, more often than not, I order the veggie version.
These come in all forms (gone are the days of the tasteless Boca disk on a bun), such as Deluxe Burger‘s falafel patty with cucumber-mint yogurt sauce or Eco-Burger‘s black bean option, bound with salsa and chipotle sour cream.
And now, after a recent visit to H BurgerCo., I’ve added another one to my list: the Eden. At this downtown shop, the patty is made of squash and beans before it’s grilled and topped with red peppers, greens, and Asian-esque sweet-and-spicy bok choy. The kicky sandwich is at once crunchy and satisfying—and so filling I can only eat half. The healthier choice means I don’t feel guilty about the side of salty, hand-cut fries.
