When Boulderites Will and Coral Frischkorn opened Cured in 2011, they had no way of predicting just how wildly successful the shop-cafe would be. Although tiny, the concept was based on bigger aspirations: To re-create the magic of the charming European markets the Frischkorns had come to love in their seven years abroad. Before settling in Boulder, the couple lived in Spain while Will trained as a professional cyclist with the renowned Garmin-Slipstream. There, they got the idea of bringing the intimate, artisanal concept of a local market-eatery back home to the States.
Located just east of the Pearl Street pedestrian mall, the original Cured resonated with the foodie-friendly, bicycle-loving community of Boulder, and attracted a loyal crowd of coffee lovers (the location also houses a location of Boxcar Coffee Roasters), cheese fans, wine connoisseurs, and gourmands. Patrons flocked to the shop for everything from artisan cheese and charcuterie to handcrafted pasta to sandwiches. Business has been so good, in fact, that in November the couple opened a second location, Cured West, located near Pearl Street’s west end.
Even tinier than the original, the new outpost keeps it simple. The offerings focus primarily on artisan chocolates, a small, carefully honed selection of boutique pantry items, and take-away eats. The deli area offers limited seating, but features an ever-changing list of high-end sandwiches, soups, and salads—all perfect for a quick work-day lunch or for throwing in a backpack for bike rides, hikes, or picnics. It’s a great one-stop spot for a satisfying lunch or dinner on the fly.
Tip: If you’re looking for a hot cup of coffee or a macchiato from Boxcar Coffee Roasters, you’ll need to head to the original Cured location. Cured West only offers bottles of Boxcar’s cold-brew.
