As a mother of twin toddlers who lives within striking distance of Sweet Cow, a four-month-old ice cream parlor in Highland, there’s no shortage of excuses to sample just about every flavor. Over the past few months I’ve tasted strawberry, chocolate oatmeal stout, Kung Pao cashew, Ozo Coffee, coconut, Nutter Butter, and many more of the creamery’s 140-flavor recipe box. But I might be done sampling: The shop’s cookies and cream is my go-to for these precious remaining summer days.
The flavor has been on Sweet Cow’s menu since the original location (in Louisville) opened in 2010—and it persists as the best-selling scoop. The folks at Sweet Cow use nothing but milk, cream, and sugar to begin; then add crushed, halved, and whole Oreos into each five-gallon batch, giving both creamy and chunky tastes of the cookie to every lick or bite. I’m a purist when it comes to ice cream (single scoop, plain cake cone), but founder Drew Honness makes his a literal cookies and cream by eating the flavor between two house-baked chocolate-chip cookies.
Tip: Look for Sweet Cow to begin offering Ozo Coffee cookies and cream later this month. The flavor incorporates milk and cream that has been steeped in the Boulder-roasted coffee for 18 hours.
