LoHi just keeps on growing: Method Collective, a community-focused coffeeshop from the team behind Method Coffee Roasters, opened on June 15.
Located on the bottom floor of the Alexan LoHi at Dickinson Plaza (at the corner of West 32nd Avenue and Tejon Street), Method Collective is the five-year-old Denver roaster’s first standalone coffeeshop (though it operates a cafe at the University of Colorado Boulder and supplies beans for more than 40 regional businesses). The new spot is focused on high-quality java, so go for an extensive menu of espressos, drip coffees, pour-overs, cortados, cappuccinos, and lattes. Flavored syrups are made in-house, and there are also teas, chai, and a turmeric latte for non-coffee drinkers.
Co-owner Kade Gianinetti calls it “a gathering place” for the community. “[Method Coffee Roasters] was the first company I started [with co-owner Alex Rawal], and the mission has always been good coffee and great service but also to see how we can influence and be more a part of a community,” he says. “Hopefully we can be seen as a place where people talk about what’s happening in Highland and can come together and create something bigger than just a cup of coffee.”
Method Collective also distinguishes itself from other neighborhood cafes with a small bodega section stocked with basic items—such as milk, eggs, and flour—as well as toiletries and locally sourced crafts. “We wanted to provide a service where residents could get essentials and items they might need on a random Wednesday night,” Gianinetti says, rather than having to drive to the closest grocery stores (none of which are in the ’hood).
For now, food is limited to pastries and bagels, but Gianinetti expects those options to expand in the near future with grab-and-go items, such as salads and sandwiches, sourced from area restaurants.
The minimalist space is naturally themed, with light woods, metal, plants and succulents, and a garage door. Work-from-homers will be happy to know that Method Collective has free WiFi and encourages hanging out.
Method Collective is open 7 a.m. to 4 p.m. daily.
