Watercourse Foods $$
This vegan cafe dishes out a wide variety of flavors, plus the Uptown spot serves breakfast all day long. For stick-to-your ribs goodness, we recommended either the biscuits and gravy or the breakfast torta filled with barley sausage, roasted onions, jalapeños, and avocado. For a sweet treat, try the crispy banana bread French toast with candied walnuts. Whatever you choose, don’t miss the champagne tea—a refreshing marriage of kombucha and bubbly. 837 E. 17th Ave., 303-832-7313, watercoursefoods.com
Sputnik $
This funky Baker hybrid of a coffee shop, diner, and bar has a separate vegan menu with several brunch items. We recommend the stacks of vegan power—quinoa cakes drizzled with an addictive garlic sauce and covered in greens—or the slightly spicy hangover scramble with tofu and green chile. And don’t pass up the weekend drink deal: a carafe of mimosas for $6. 3 S. Broadway, 720-570-4503, sputnikdenver.com
That's only $1 per issue!
Corner Beet Café $
This bright and cozy shop in Capitol Hill makes small batches of organic juice daily. Sip a strikingly purple Beet-Ade for its rich, earthy flavor or a Bloom for a surprising fennel bite. If you’re hungry, look to the toast menu for the Churro with coconut butter and cinnamon, or the Biz with tomato, pesto, and avocado. 1401 Odgen St., 720-295-4447, cornerbeet.com
City O’ City $$
This Capitol Hill veggie hangout can easily make an eggless, dairy-free version of almost every entrée on the menu. Our favorite: the PB&J waffle with peanut butter anglaise, house-made jam, and potato chips—a delightful grown-up version of a grade school brown-bag lunch. For a more classic combo, get the city breakfast (tofu scramble, home fries, and a creamy biscuit with gravy)—on weekdays, it comes with a bottomless cup of coffee. Plus, check out the breakfast booze offerings, which include a beermosa (Colette Farmhouse Ale with oj) and the Strummer (cabernet with cola). 206 E. 13th Ave., 303-831-6443, cityocitydenver.com
Beet Box $
This laid-back cafe is the perfect place to catch up with friends over a creamy latte or spicy chai—and you never have to ask for almond milk. The drinks, baked goods, and sammies are all vegan, plus Beet Box offers several gluten-free options. For a seasonal treat, taste the maple-apple-walnut donut, or snack on a flaky cherry-chocolate scone for gluten-free sweet tooth satisfaction. If you’re in the mood for a savory meal, the creamy-crunchy avocado melt makes for a filling lunch or brunch. 1030 E. 22nd Ave., 303-861-0017, beetboxdenver.com
Prosperoats $
If oatmeal is one of your staples, this little LoHi shop is worth a visit. Prosperoats sells build-your-own bowls with a vegan base of chewy steel-cut oats or quinoa-infused oats with three toppings and a sweetener of your choice. For a festive warm-up, try the Winter Berries Bowl (a mix of blueberries, cranberries, and golden raisins) with maple syrup and a splash of almond milk. And be sure to grab one of the house-squeezed juices—the brightly colored l.o.c.a., an aptly-named combination of lemon, orange, carrot, and apple, is sure to wake you up. 2550 15th St., 303-995-8444, prosperoats.com
Linger $$
Everyone’s favorite “eatuary” is full of surprises—one of which is its vegan-friendly brunch menu. Linger offers plant-based alternatives for several of its beloved dishes, including the breakfast dosa (a crispy lentil crepe filled with spicy masala potatoes and creamy avocado) and the colorful crispy tofu bun with kimchi and spicy sambal. If you’re going out with friends, be sure to snag some sharable sweet potato waffles fries and bottomless mimosas. 2030 W. 30th Ave., 303-993-3120, lingerdenver.com
