The restaurant’s cozy wooden decor, subtle lighting, and indoor fireplace furthered the high-country feel. That familiar vibe extended to the seasonal menu, which highlights chef Christopher Sanchez’s talent of crafting American foods with French and European accents. Perhaps the best expression of his skill is the perfectly flaky Rocky Mountain trout served with rustic pesto, lentils, and Swiss chard.
