Zanitas Mexican and Margaritas, a bustling new eatery on the corner of College Avenue and 14th Street in Boulder, is anything but your ho-hum, fast-casual joint. In addition to the bright, colorful digs—plus a full bar and four flat-screen TVs—the food and drink menus deliver with zany combinations.
Order the Cauliflower Power tacos (pictured) stuffed with grilled cauliflower, blistered onions, and poblano peppers. Shredded lettuce, chipotle ranch salsa, and a touch of queso sauce add zip to the veggie option. The Holy Smokes taco with wood-roasted salmon, arugula, cilantro, crispy veggies, salsa, cilantro, and Cotija cheese is equally well informed, if a tad more sophisticated. And then there’s the strangely delicious Happy Taco with mac and cheese, grilled smoked sausage, lime slaw, fried pickle, salsa, and pickled jalapeño. (This one could only exist in a college town.)
If this sounds like too much fusion, stick to the more traditional tacos, burritos, and enchiladas.
Tip: Tame the heat (and embrace the vibe) with a Twirler cocktail: frozen sangría and margarita swirled together and topped with a float of tequila and a twist of lime.
