The summer breezes flowing through the wide patio doors of the Bistro at Stapleton serve as a reminder that this new restaurant is a fresh addition to the family-friendly neighborhood. While Stapleton has many dining options, nothing comes close to the relaxed, upscale ambience of chef Cristino Griego’s bistro.
Open for breakfast, lunch, and dinner every day, the Bistro jumpstarts each morning with Boxcar coffees and Boulder Breadworks’ pastries, then slides into lunchtime with salads and panini (stuffed with the likes of panzanella salad or Camembert, fig jam, prosciutto, mustard, and arugula). Service continues with European-style dining into the evening with shared small plates, including house-made and imported charcuterie and cheese. Don’t miss the homemade burrata (pictured) with heirloom tomatoes, roasted garlic, microbasil, and a drizzle of Antico Frantoio Romano olive oil.
Bonus: Farm tables, bouquets of wildflowers, and Oriental rugs give the Bistro a casual, homey feel.
