No one loves bicycling more than the residents of Boulder, so when owner Rueben Verplank opened Rueben’s Burger Bistro last week with a Tour de France theme, it was an instant hot spot. Offering 15 juicy burgers (with names like the Peloton, the Alp d’ Huez, and the Criterium), cooked this month by Lance Armstrong’s personal chef, Biju Thomas, it’s easy to see the cycling spin at the Bistro runs deep.
Cyclists may be wooed by a roomy bike corral to park your ride, TVs tuned to cycling highlights, and walls painted in the colors of team jerseys, but they’ll return for the juicy all-natural burgers with signature pretzel buns (we love the Mont Venoux with bacon, cheddar, fried egg, and crispy fries), flavorful soups, salads, and sweet-potato fries. There’s also an impressive collection of Belgian beers, with each brew served in its own special glass.
Tip: Not a beef eater? Choose a chicken breast, turkey, or veggie burger, or opt for the build-your-own mac and cheese with 11 vegetarian options.
