After years of running a wholesale bakery business, vegan bakery Beet Box recently opened a brick-and-mortar in Denver’s San Rafael neighborhood. Owners Michael Craig and Blair Ednie have not only perfected vegan baking, they’ve done so at altitude. The duo’s practiced technique is particularly noticeable in the delicate crusts that ring savory tarts such as the delicious potato and kale version with coconut-cashew cream and the slightest hint of lemon; and in the flaky layers of croissant that surround fillings like mushroom and organic baby spinach. And there are sweets: gooey, straight-from-the-oven chocolate chip cookies; cupcakes with swirls of frosting and delicate crumb; and tender doughnuts topped with icing and shredded coconut. Take your pick and enjoy the treat in the sunny space.
Party Tip: Order two days ahead for cakes and seasonal fruit pies.
