Gluten-free foods have come a long way from the rock-hard bagels and tasteless muffins of years past, thanks to the addition of gluten-free menus in restaurants around town and the creation of authentic-tasting product lines. Add Solterra Foods to that list.
The Colorado-based line of all-natural, gluten-free, preservative-free gourmet foods was created by Elaine Valenza-Opdahl after her son was diagnosed with celiac disease. The highlight is their bake-in-bag pizza—the first of its kind—which prevents cross-contamination and comes in two flavors: margherita (my favorite) and vegan cheese. Simply throw the bag in a 450-degree oven for five to eight minutes, and dinner’s ready.
Other must-try picks include the gnocchi (available in four flavors: potato, spinach, roasted red pepper, and tres colore, a mix of all three) and three incredibly moist dessert mixes (brownie, French vanilla mini chip cake, and Key lime, which I highly recommend).
