When you step into Zolo, Boulder’s Southwestern grill, this Thursday, forget about ordering margaritas. The night is all about beer–specifically, Boulder’s Avery Brewing Company suds.
For this night only, Zolo chef Rob Rosser has created a four-course menu to match Avery’s brews. The salad combines spinach, pineapple, and fried crab; the entrée dishes up a succulent bacon-wrapped pork chop; and dessert roasts honey into a sweet crème brûlée. Each of the well-crafted courses includes two beer pairings and reminds diners just why Boulder food and drink have developed a national reputation.
