Chef Troy Guard, owner of TAG in Larimer Square, has gained a well-deserved reputation for artfully blending the assertive flavors of Eastern cuisine (i.e., spicy dragon sauce) with Western preparations (braised pork shoulder). Thanks to the opening of TAG Raw Bar, located in the Larimer Square Walkway, diners now have another place to sample Guard’s creations.
As the name suggests, nothing at the raw bar is cooked in an oven or over an open flame. As a result, the menu of small plates relies heavily on fresh, pure flavors. Among my favorites: the hiramasa tiradito—thin slices of yellowtail sashimi folded over red jalapeño and fragrant cilantro, then drizzled with tart Persian lime juice—and the mild kangaroo tartare served with frothy cinnamon foie-gras foam.
Sit on an orange stool at the counter (the tiny restaurant is configured like a diner), order the tasting menu, and let the chefs surprise you. But go now. This place is going to be slammed in no time.
Tip: Try the sparkling rose sake with your meal. The sweet acidity pairs well with the strong flavors.
