Denverites are no strangers to embracing more sustainable lifestyles, and that doesn’t just stop at Colorado’s borders. Tonight Go Fish! will play to that dedication with a responsibly sourced seafood dinner at Baur’s Restaurant & Listening Lounge.
The strolling dinner is hosted by chefs Dory Ford of Baur’s, Sheila Lucero of Jax Fish House & Oyster Bar, and Kelly Whitaker of Basta and Cart-Driver, the three of whom are members of the Seafood Watch Blue Ribbon Task Force. Seafood Watch is a national group of culinary leaders focused on preserving the ocean and food systems. Some of the Mile High City’s top chefs, including Paul Reilly of Beast & Bottle, Matt Vawter of Mercantile Dining & Provision, and Kevin Grossi of Lola Mexican Fish House join the trio to prepare dishes using seafood provided by Denver-based Seattle Fish Co.
Sip beer, wine, and cocktails while celebrating sustainable seafood with some of Denver’s best. “I’m excited to work with Seafood Watch and my fellow chefs to show Denver diners that some of the best, most sustainable fish can be found a mile above sea level,” Ford says.
