Work has been a whirlwind for chef-partner Brett Smith since he and Dave Query (owner of Big Red F restaurant group) opened the Post Brewing Company (PBC) in Lafayette four years ago. PBC has expanded quickly, with the duo opening three more locations in Colorado along the way (in Longmont, Denver, and Boulder). And then, last year, Smith got an unexpected surprise: Food Network’s Diners, Drive-Ins and Dives wanted to feature his fried chicken- and beer-joint.
The episode featuring PBC will air on national television tonight.
Although raised in New York state, Smith calls himself a “Southern boy at heart.” The locally sourced comfort food he delivers at PBC underscores the sentiment. Smith’s winning gluten-free fried chicken and chicken chicharrones are featured on the episode, which was filmed at the Longmont outpost.
To celebrate PBC’s accomplishments and the DDD episode, tonight, Friday, February 2, all four PBC locations will host viewing parties. The events will feature $2 cans of Post beers, as well as games and prizes for attendees. Smith, who will be viewing the episode for the first time himself, is excited—but understandably nervous—to see how his restaurant will be portrayed.
“I hope people who get to see it can learn a bit more about our process and see us have fun,” Smith says. “Looking forward… hopefully, somewhere down the road, I can help give our current chefs the same opportunities I had [with Big Red F]—to help them open up their own restaurants or lead a new location.”
