If you were fortunate enough to catch the Organic Sandwich Company’s farm-to-table sandwiches at this summer’s Boulder Farmer’s Market, listen up. Boulder sandwich creator Marcy Miller plans to open a brick-and-mortar location at 16th and Pearl after the start of the new year.
The menu promises farm-fresh ingredients from Colorado producers including Oxford Gardens, Eagle Springs Organics, and Chicken Track Eggs. Everything will be organic, as well as GMO-, hormone-, and antibiotic-free. I for one, can’t wait for the breakfast sandwiches, especially the bacon, egg, and caramelized onion combo with smoky, crisped bacon, local egg, melted, sharp white cheddar cheese, and soft caramelized onions on a chewy pretzel bun. And here’s hoping a market favorite—an egg sandwich with barely wilted spinach and roasted garlic, and truffled Neufchâtel—is continued. Either way, when the Organic Sandwich Company opens, I’ll be the first in line.
Tip: Don’t worry about setting your alarm, Miller plans to be open for lunch first adding breakfast to the line-up later.
