If anyone knows the meaning of farm-to-table, it’s Eric Skokan, the chef-owner-farmer of Black Cat Bistro and Black Cat Farm in Boulder. Night after night, Skokan turns his exquisite farm-raised meats and organic produce into imaginative entrées at Black Cat. And, soon, there will be more to love: At the end of the month, Skokan will open Bramble and Hare at 1970 13th St., right next door to the Black Cat. The name—inspired by the Beatrix Potter books the Skokans read to their children—is meant to remind diners that life is best when the simplest pleasures are cherished.
Expect Bramble and Hare’s farm-to-table fare to be more straightforward and everyday than that of Black Cat’s. (Think: freshly ground burgers from farm-raised beef topped with heirloom tomatoes or sliced beets). There will be a prix-fixe plate of the day and inspired seasonal soups, salads, cheeses, meats, and charcuterie, all straight from the farm. The 24-seat restaurant, decorated in salvaged pieces from around the farm, will also feature a walk-up window to serve diners too busy to sit down.
Tip: Check out Skokan’s new line of frozen farm-to-table entrées such as velvety beet soup, hearty slow-cooked pork chile, and tender veggie-filled quiche (pictured). All are available on Saturdays at Black Cat’s Farm Stand at Boulder’s Farmers’ Market.
