If you’re a Popsicle-shop owner, what do you do when the sizzling days of summer fade into the cold blitz of winter? Diversify. Which is just what Aiko Pops did when it opened in Platt Park this past summer. Owners Christopher and Jessica Mosera, who took over a former deli space, launched a small sandwich menu. The best of the bunch is the Curd, made with six-month aged Manchego, locally made Primo Raspberry Habanero Preserves, and crispy, applewood-smoked bacon tucked inside slices of bread from Trompeau Bakery.
