One look at Jon Schlegel’s (founder and co-owner of Snooze) expansion plans and you’ll agree: Breakfast is big business. After stunning success at the restaurant’s first four locations (three in Denver and one in Fort Collins), Schlegel is bringing the spunky eatery to both Boulder and San Diego.
Close to home, the University of Denver grad says he can’t wait to become part of Boulder’s “innovative, sustainable, independent” community of diners. Schlegel is shooting for a September opening, though construction has a ways to go. Whenever it opens, Snooze’s superstar menu—peppered with local ingredients like Udi’s bread, Noosa yogurt, and Custom Corned Beef—is destined to become a Pearl Street favorite. For me, those ridiculously good sweet potato pancakes, the sinful sticky bun French toast, and the signature blend of smooth Guatemalan coffee can’t arrive soon enough.
