John DePierro, executive chef at Bones, announced he’ll step down from his position early next year. DePierro, who has been at the helm of Cap Hill’s beloved ramen shop for the past three years, says it’s time for him to focus on the growth of his newly opened MiJo at Avanti Food & Beverage with his partner (and Bones sous chef) Michael Nevarez. “MiJo is going to be doing a lot of new things in Colorado,” DePierro says. “We want to do an Asian barbecue concept next with Work & Class-ish, community kind of plates.”
Departing from Bones is bittersweet for DePierro. “[Frank Bonanno] gave me the resources I needed to be where I am right now and get it done,” he says. “But now I need to work on myself and on what we’re doing with MiJo.”
DePierro’s final service at Bones has not been set, but he says it will likely be sometime in January or early February. In the meantime, drop in to warm up with a bowl of his green chile ramen.
