Casual, comfortable, six-year-old Beast & Bottle is better than it’s ever been. Chef and co-owner Paul Reilly (who, with his sister, Aileen, and brother-in-law, J.P. Taylor, also owns Coperta and Pizzeria Coperta at Broadway Market) is in the kitchen full time these days, and a recent menu rejigger has shone a spotlight on his commitment to sustainable sourcing. A new lamb section showcases the whole animal that arrives every Tuesday from Loveland’s Ewe Bet Ranch. The snack lineup, which rotates, has included a finger-licking dish of tamari-caramel-glazed black cod collars—inspired by fish market trim Paul couldn’t let go to waste—for a few months now (I hope it stays forever). But Fridays might be the best time to visit: The plat du jour features produce from Beast & Bottle’s CSA share in DeLaney Community Farm, an Aurora-based agricultural endeavor that supports resettled refugees. $$$, 719 E. 17th Ave., 303-623-3223
