This 10-month-old brick-and-mortar baby from husband-and-wife partners Kyle and Katy Foster has introduced Denver to a new, and welcome, version of Southern food. For starters, Kyle knows how to bake, fry, preserve, and butcher like a boss. Take his phenomenal biscuits, cooked to order and served with house-churned butter. Or consider his dedication to whole-animal butchery, sourcing Colorado pigs and using lesser-known cuts for butcher’s specials and family-style suppers. There’s also his masterful pork-and-oyster sausage on the dinner menu, served with whiskey grits and celery cured with hops, which Kyle based on a recipe from the 1800s.
