Golden Palisade peaches are the jewels of Colorado’s harvest. In recent weeks, we’ve made it our mission to sample the metro area’s myriad dishes featuring the stone fruit. The following are our favorites:
I never expected Salt Bistro’s popular (and delicious) Colorado peach flatbread to be edged out by the spot’s wood-grilled, Long Family Farm pork chops crowned with a grilled Western Slope peach. But it has been, thanks to an entrée that seamlessly intermingles savory with sweet. Luca D’Italia takes a similar tack by pairing the salty, crispy skin of suckling pig porchetta with the soft juiciness of the Palisade peach.
Dessert is a draw between Black Cat’s composed dish of fresh Rancho Durazno peaches—perfectly cut and accented with toasted pound cake and silky vanilla panna cotta, all atop a drizzle of peach coulis—and Frasca Food and Wine’s flaky peach turnover, made with tender folds of house-made puff pastry and cinnamon crème anglaise.
