Enter Street Kitchen Asian Bistro. Chef and co-owner Mary Nguyen first discovered the snack (which translates to “as you like it”) in Osaka, Japan, where she frequented tiny eateries—including one that averaged a daily line of two hours—that served only okonomiyaki. At Street Kitchen, we order the dish for texture (both chewy and crispy), variety (every taste brings something different), and the sprinkle of fish flakes that wiggles around (thanks to the steam), as if daring us to take a bite.
