March Madness puts many of us in the mood for fare like wings and burgers. But if you can’t decide which one you are in the mood for, try a sinfully delicious hybrid: the Emma sandwich from Fire on the Mountain.
The “cult favorite”—which started as a special but was so popular that it became a permanent addition—is like eating a plate of (boneless) wings on a bun. Packed between a toasted Brioche roll from City Bakery sits two crispy, breaded chicken tenders that have been slathered with the Highland wing joint’s creamy and piquant blue-cheese-Buffalo sauce. Cooks add blue cheese crumbles, lettuce, onion, tomato, a garlic mayonnaise, and pieces of thick-cut bacon.
Just before serving, the kitchen jams the tower of flavor (pictured) with a wood-handled steak knife to hold everything together. This eat is one-stop-shopping for “all of the best things we have to offer,” says owner Andrea West. And, she promises, “I won’t tell your yoga teacher.”
