The Brewery: Caution Brewing Co.

The Space: Caution has recently expanded to Lakewood, but we’re partial to their tucked-away (read: in the middle of an industrial area) taproom on 39th Avenue. While the location seems out-of-the-way, it is practically in I-70’s shadow and just a hop away from the Anschutz Medical Campus. The drinking room is small, though, so go early on a Friday to grab a spot.
The Brews: Don’t come here for the oh-so Colorado list of seven different types of IPA. They’ll have something hoppy on tap, sure, but Caution focuses on an eclectic mixes of flavors (think: cardamom-spiked brews and blast-your-taste buds porters). In fact, when Wang talks about his brews, he describes them like a chef would, from where the ingredients are sourced to the spice profile. “I grew up around food,” says Wang (his parents own Lakewoord’s Lao Wang Noodle House). “Neither of us can cook, but we brew. There are so many cool things that work so well with beer.”
Buzzed Trivia: Caution’s Denver location houses a relic from Colorado’s micro-brewing past. The company bought and brews with Odell Brewing Company’s five barrel system, which is the namesake for the Fort Collins brewery’s 5 Barrel Pale Ale.

Take Home: A growler of Lao Wang Lager. Bonus: Swing by Lao Wang Noodle House for takeout. You can sip on the lager, which is on tap, while you wait for an order of their must-have soup dumplings.
