I am of the mind that flatbread, be it a charred, almost crispy pizza crust or a chewy, tender round of pita bread, can make or break a great entrée. Joe Serafin and Aaron Kennedy, co-owners of Basil Flats, a fast-casual restaurant specializing in house-made flatbreads, are betting that I’m not the only one to think so. Following a successful run at their original Longmont location, the duo is expanding to the Williams Village neighborhood of the CU Boulder campus. The outpost should open this month in the former Drake’s Haus location.
As founding members of Noodles & Company, Serafin and Kennedy know their way around a solid business model—and that prowess shows at Basil Flats. Using top-notch ingredients like Boulder Sausage and Haystack Mountain Goat Cheese, as well as breads and sauces made in house, the eatery offers a fresh array of Mediterranean flavors via salads, grilled sandwiches, wraps, and wood-fired pizzas.
Must-orders include the chicken shawarma, a wrap made with tender, almost stretchy pita bread that envelopes strips of grilled chicken, crispy lettuce, tomato, feta, cucumber, hummus, and tzatziki sauce. Equally delicious is the prosciutto and arugula thin crusted pizza. Order the pie to go and the kitchen will wrap the greens separately to ensure the crust is just as crispy when you get home.
