The team behind Carboy Winery has had their hands full this year. Just this week, the three-year-old wine brand is releasing its latest signature blend, the Grand Valley Vin ’59, made exclusively with Colorado-grown grapes; you can taste it at Carboy’s locations in Denver, Littleton, and Breckenridge. Featuring a harmonious blend of Grand Valley Malbec, Cabernet Franc, Merlot, Petit Verdot, and Petite Pearl, the elegant wine pays tribute to ’Fifty-niners, or those gold seekers who flocked to the Centennial State in 1859.
The debut of Vin ’59 follows the September opening of Carboy’s newest winery, wine bar, bottle shop, and Mediterranean restaurant, Logan Street. The sprawling Capitol Hill quadruple-threat took over the former Govnr’s Park Tavern space, which closed in 2018 after more than 40 years in business. Ivy on Seventh, a daytime eatery adjacent to Logan Street, opened in April.
Carboy also experienced a record grape harvest this year, bringing in 145 tons of Grand Valley fruit—a 200 percent increase from the previous year. The company expanded its Littleton winery by 6,000 square feet this summer, too, in anticipation of the bounty.
But there are still more developments to come. For starters, Carboy will break ground on a new sparkling wine facility in the courtyard behind Logan Street next month. Fermentation tanks in the aptly named “bubble barn,” situated in a former caretaker’s stable, will produce the brand’s first sparkling wines. “The future of Colorado wine may be in sparkling,” says Kevin Webber, Carboy’s director of sales and marketing.
So, while you won’t be able to taste Carboy’s bubbly creations until spring 2020, it is hosting wine release parties for the Grand Valley Vin ‘59 at its Denver, Littleton, and Breckenridge locations this week: Pop into any of the tasting rooms from November 25–30 between 12–6 p.m. for free tastings and discounted bottles. The Denver winery will also throw an official grand opening celebration December 2–7, complete with daily food and wine specials, raffles, and giveaways.
