Looking for an excuse to enjoy a cocktail? You’re in luck: In honor of National Margarita Day (Monday, February 22), we’ve rounded up three of the best margs in the area and matched them with the perfect taco. Ring in the holiday right and seek out one of these heavenly pairings.
Pinche Tacos
Neighborhood: Highland and City Park
If you’re looking for the perfect marg, head to one of Pinche Tacos‘ two locations. The refreshingly tart House Casa Crib Coin Marg combines Exotico Blanco Tequila, orange liqueur, tart lime, and simple syrup, and is carefully garnished with a salted rim and a wedge of lime. The pucker of the fresh citrus is the perfect foil to one of Pinches’ savory tacos.
Taco Pairing: The Cordero taco features double corn tortillas piled high with braised and shredded lamb shank, esquite (a Mexican corn salad), crumbled queso fresco, and a dash of cilantro. We recommend ordering more than one of these savory treats because they sure do go down fast. 3300 West 32nd Ave., 720-502-4608; 1514 York St., 720-475-1337
Comida
Neighborhood: RiNo and Longmont
On National Margarita Day you’ll find us at the Source‘s lively taqueria, Comida. The margarita menu is vast, but the popular watermelon jalapeño margarita is our standard drink order. This sipper features a light, sweet watermelon flavor carefully blended with agave, lime, and a kick of jalapeño. While it lacks a harsh tequila bite, the heat from the jalapeño more than makes up for it. Bonus: You can find the recipe for this margarita in “5280: The Cookbook.”
Taco Pairing: The Arrachera taco is made with thinly sliced grilled skirt steak over creamy refrito beans, roasted onions, and fresh pico de gallo on a soft corn tortilla. Topped with house crema and salty Cotija cheese, it pairs nicely with the fruitiness of the watermelon jalapeño margarita. 3350 Brighton Blvd., 303-296-2747; 721 Confidence Drive, Longmont, 720-204-6455
Centro Latin Kitchen & Refreshment Palace
Neighborhood: Boulder
Whether you stop by for a happy hour bite or a full-on dinner, Boulder favorite Centro is the ideal place to celebrate National Margarita Day. Stick with “La Casa Margarita,” which mixes Milagro Silver Tequila, Patrón Citrónge orange liqueur, agave, and lime and orange juices. This tequila-forward marg strikes the ideal tart-sweet balance.
Taco Pairing: For the ultimate accompaniment to Centro’s classic margarita, order the garlic shrimp taco. This snack features pan-roasted shrimp, a zesty slaw, and a sweet-savory garlic and jalapeño aïoli on a warm corn tortilla. 950 Pearl St., Boulder, 303-442-7771
