Every menu has a sleeper dish—one that does so little to sell itself that it’s easy to overlook. A good server will point it out, bolster the description, and encourage you to order it.

One example is Vesta Dipping Grill‘s tomato and avocado salad, which reads only that it comes with grilled house-cured bacon and Cava vinaigrette. In this composed dish, large cubes of the acidic, sun-ripened fruit comingle with slices of creamy avocado. The salty, smoky slivers of bacon offer substance and decadence while the Cava vinaigrette adds a smooth elegance. In all, the salad functions like a dressed up, deconstructed BLT. Even if your server doesn’t point it out, take my advice and order it.
